MAIN DISH: CHERYL'S FANCY PANTS CHICKEN(click here to print)

CHERYL'S FANCY PANTS CHICKEN
You'll need 2 packages of THIN chicken breasts
a few slices of prosciutto or thinly sliced ham
a half bag of fresh spinach...
an 8 oz package of fresh sliced mushrooms
1 envelope Lipton Recipe Secret's Savory Herb and Garlic (found at Wal-Mart super stores)
1/2C White Wine
1/4C Olive oil
8oz shredded mozzarella

Preheat oven to 375
spray a 13/9" pan with pam
put 2 layers of chicken in pan,
cover with proscuitto or thinly sliced ham
top with spinach, sprinkle with a little kosher salt and coarse black pepper
top with mushrooms
whisk together olive oil, wine and savory herb envelope
pour over everything.
Lay a piece of foil over (not tight)
bake for 30 minutes
top with cheese and bake for 5 minutes more.

  3. You leave them whole. If you can't find any thin breasts. just use a meat mallot to pound them down between 2 pieces of waxed paper.

  7. No, it is not cooked. I would make it with one layer of chicken so that the chicken is done or leave it in the oven longer

  8. I cannot find a store that carries the Liptons Recipe Secrets Savory Herb and Garlic. I am going to substitute Garlic and herb seasoning. Ill let you know how it turns out.

  13. Yes you can keep it in the frig overnight. The wet ingredients will act as more of a marinade then and bring more flavor to the casserole

  14. had this for supper tonight and I don't care for mushrooms or spinach. the family loved it and the chicken had an awesome flavor. the only problem I had was that some of the chicken wasn't cooked. but will definitely add this to our menu. thanks...

    it a little longer and cut into it and make sure it is no longer pink inside. Glad the family like it!

  19. a packet of 4 or 5. If you use 2 layers of chicken breasts it may need a little longer time to bake. Make sure the breasts are no longer pink inside and the juices run clear. ENJOY!

  21. It depends how many chicken breasts you use. 1 per person. so 5-6 if you are using one layer of chicken breast. ..10 if you are using 10 or 11 chicken breasts. Thank you for your question

  23. My friend gave me this recipe after her entire large family (including 4 picky kids between ages 6 & 18) ate it up with no left-overs. I really don't usually like mushrooms but let me tell you: in this recipe, the amazing flavor of the sauce made the mushrooms only taste like the AMAZING sauce...no mushroom taste only mushroom texture. My whole family seriously loved it, including my VERY picky 7 year old son. He didn't want to try it but once he had one bite he gobbled it up and asked for left-overs the next night. My husband asked me to make it again tonight (3 days after the 1st time of my making it). I did cook it for about 45 minutes, before the 5 minutes after adding the cheese. I put it on seasoned brown rice. It was perfect. I'm going to try to modify it tonight to make it in a slow cooker. I'm sure the chicken will be shredded when it's done but with sauce like this (tastes sooooo good), it should still be delicious. I will also be using bacon instead of prosciutto, and will be adding the spinach toward the end. We will see what we end up with ;). Thanks so much for the recipe!!! This one is a serious keeper!!!

  31. The recipe is wonderful! I was unable to find the Lipton soup at my Walmart. I found Swanson Flavor Boost Garlic & Herb that contained 4 concentrated packets. I used two of them.

  33. This is actually my recipe. I'm Cheryl! Thanks so much for sharing my recipe, and thanks for all the comments! I'm going to look for the Swanson Flavor Boost Garlic and Herb and give it a try, just for comparison sake, as the mix is a key ingredient in my opinion. The last time I made this, I layered the ingredients, ending in spinach, then poured the sauce over, baked, then added more cheese and baked till it melted. It was delicious! I also tried cubing the chicken to make it easier for guests to help themselves. Still got great reviews, but in my opinion the chicken was a little tougher. Anyway, thank you again for sharing my recipe!

  34. Hi Chery, I actually found this on bigoven.com , but nice to hear from you. It is one of our most popular recipes. Good idea of cutting the chicken into cubes. The only problem I had with it was that it was a little too much liquid at the bottom of the pan. Please let us know how the Swanson Flavor boost works out. Thank for contacting me.
